Horchata de Chufa (Tiger Nut Milk)
If you are looking to add more resistant starch to your diet, here is a refreshing beverage. Horchata de chufa is made from Tiger Nuts instead of rice. This Spanish version is simple to make, nutritious, and loaded with resistant starch to feed your microbiome.
Directions for Horchata de Chufa:
- 1 cup of tiger nuts that have been soaked overnight and drained
- 4 cups almost boiling water
- 1/4 cup maple syrup
- 1/4 teaspoon sea salt
- Ground cinnamon
- Add your soaked and then drained nuts to your Vitamix or other high powered blender.
- Add the hot water to your blender and blend on high for about 2 minutes, or until fairly smooth.
- Pour this mixture through cheesecloth or nut milk bag into a bowl.
- Once the mixture is cool enough to handle, make a bag with the cheesecloth to squeeze out the extra liquid with your hands.
- Add your salt and maple syrup and mix.
- This drink is traditionally served cold and/or over ice.
- This should keep for about a week in your fridge.

Tiger Nuts as a Simple Snack
You can eat Tiger Nuts as well! My son loves them.
Since tiger nuts have been dried to allow for long storage, you will need to rehydrate them. Soak your tiger nuts in water for at least 12 hours and up to 48. The soaking time will change the texture. Less soaking equals crunchier tiger nuts and more equals softer tiger nuts. You can also add flavorings such as cinnamon sticks and or vanilla beans to the soaking water. Drain and let dry and enjoy!!
oooo, i always see this and want to try it but I’m allergic to cinnamon. I could make my own! Thanks for sharing the recipe.
Yes, you can make your own and skip the cinnamon. Nutmeg would be good too!
I’ve never had a tiger nut – thank you for the tip! What a great way to sub out the rice – this looks really robust and creamy. I wonder if I should try it with cashews first – I have those on hand. Although, I really like the sound of those tiger nuts. Either way, it will be tasty!!
Let me know what you think!! 🙂
