Lemon Curd

A nutritious lemon curd recipe using no refined sugar.
Prep Time 5 minutes
Cook Time 10 minutes

Ingredients
  

  • 6 pastured egg yolks
  • 3 lemons
  • 1/4 cup raw honey
  • 2 tablespoons organic maple syrup
  • 1/4 cup grass-fed organic unsalted butter cut into chunks
  • Pinch fine sea salt
  • Ice for ice bath

Instructions
 

  • Wash and dry lemons. Zest them and then juice them.
  • In a heat-proof bowl, combine all of the ingredients except for the butter. (Remember that the ice is for the ice bath ;)
  • Set the bowl over a pot of simmering water and stir it frequently. Once the mixture thickens (about 5-8 minutes), start adding the butter one chunk at a time.
  • Once the butter is melted, remove the bowl and put it into a larger bowl with ice to stop the cooking.
  • Enjoy!

Notes

You will have zest in your lemon curd. If you would like a smoother consistency (we do), then push it through a fine mesh strainer before it cools.
