1/4cupgrass-fedorganic unsalted butter cut into chunks
Pinchfine sea salt
Icefor ice bath
Instructions
Wash and dry lemons. Zest them and then juice them.
In a heat-proof bowl, combine all of the ingredients except for the butter. (Remember that the ice is for the ice bath ;)
Set the bowl over a pot of simmering water and stir it frequently. Once the mixture thickens (about 5-8 minutes), start adding the butter one chunk at a time.
Once the butter is melted, remove the bowl and put it into a larger bowl with ice to stop the cooking.

Notes
You will have zest in your lemon curd. If you would like a smoother consistency (we do), then push it through a fine mesh strainer before it cools.
