Chicken and Rice Soup

A quick and easy nourishing soup.
Prep Time 10 minutes
Cook Time 25 minutes

Ingredients
  

  • half of the meat from a roasted chicken
  • 1 onion finely chopped
  • 3 cloves of garlic minced
  • 4 carrots chopped
  • 1 cup leftover rice
  • 3 ribs of celery chopped
  • Chicken bone broth 3 or 4 quarts
  • 1-2 cups leftover rice
  • Celtic sea salt
  • Thyme fresh or dried

Instructions
 

  • In a dutch oven or heavy sauce pan, saute the onion over medium heat for about 5 minutes.
  • Add minced garlic and saute until fragrant.
  • Add chicken bone broth and bring to a soft boil.
  • Add carrots and thyme and simmer for 10 minutes.
  • Add celery and roasted chicken and simmer an additional 5 minutes.
  • Add leftover rice and serve! So easy and quick!

Notes

I like to add chopped fresh parsley right before serving for a little freshness.
