Chicken and Rice Soup

Ingredients
half of the meat from a roasted chicken
1
onion finely chopped
3
cloves
of garlic
minced
4
carrots
chopped
1
cup
leftover rice
3
ribs of celery
chopped
Chicken bone broth
3 or 4 quarts
1-2
cups
leftover rice
Celtic sea salt
Thyme
fresh or dried
Instructions
In a dutch oven or heavy sauce pan, saute the onion over medium heat for about 5 minutes.
Add minced garlic and saute until fragrant.
Add chicken bone broth and bring to a soft boil.
Add carrots and thyme and simmer for 10 minutes.
Add celery and roasted chicken and simmer an additional 5 minutes.
Add leftover rice and serve! So easy and quick!
Notes
I like to add chopped fresh parsley right before serving for a little freshness.
